Carbon steel is reactive — it will rust quickly if not properly cared for. Always wash immediately after use, dry thoroughly, and apply a thin coat of food-safe oil (camellia, mineral) before storage. Over time it develops a patina that offers some natural protection and, for many users, becomes part of the knife's character. Rewarding to use, but not recommended if you want a "wash and forget" knife.

V-Toku 1 V 金 1 號

硬度 洛氏硬度(HRC) 衡量鋼材抵抗永久變形的能力。就廚刀而言:

55–58 HRC — Soft. Easy to sharpen and forgiving of rough use, but dulls faster. Typical of most German knives.
59–61 HRC — Balanced. Good edge retention with manageable sharpening. Common in mid-range Japanese knives.
62–64 HRC — Hard. Excellent edge retention, holds a very fine edge. Requires more care and a fine stone to sharpen.
65+ HRC — Very hard. Exceptional edge longevity but more brittle — more prone to chipping if used roughly.

Higher is not always better — it depends on how you use and maintain your knife.

V-Toku 1(V特1号,V-Special 1)是武生特殊鋼對經典日立青鋼一號的演繹。作為一種合金碳鋼,其化學成分與青鋼一號非常接近,並添加了釩及約1%的鎢,加上武生宣稱更高的純度,V-Toku 1的耐磨性應略優於青鋼二號。



V-Toku 1具有極佳的淬透性,可達到HRC64的硬度,許多刀匠會利用此硬度打造出極薄刀刃,使其切割食材時表現極為出色。由於武生也生產含銅或青銅層的夾鋼胚料,V-Toku 亦可見於歐美刀匠的作品中,讓眾多廚師得以享受碳鋼刀具卓越的切割體驗。

    W 2.02.5% Forms hard carbides for wear resistance and edge stability, and keeps the steel hard even at elevated temperatures.
    C 1.11.2% The primary hardening element. More carbon means a harder edge that holds longer — but past a point it trades away toughness and rust resistance.
    Cr 0.20.5% Raises corrosion resistance; at roughly 13%+ free chromium the steel qualifies as stainless. Also improves hardenability and wear.
    Mn 0.5% Aids hardenability and strength and acts as a deoxidiser in smelting. Too much can reduce toughness.
    Si 0.00.35% Strengthens the steel matrix and acts as a deoxidiser, improving hardness and resistance to oxidation.
    Ni 0.00.25% Improves toughness and ductility without sacrificing hardness, and adds a small boost to corrosion resistance.
    V 0.00.2% Forms extremely hard vanadium carbides for superior edge retention, and refines the grain for a finer, tougher edge.
    P 0.00.03% An impurity from smelting. Even small amounts promote brittleness, so steelmakers keep it as low as possible.
    S 0.00.03% An impurity that reduces toughness and promotes brittleness; only ever added deliberately in free-machining steels.
