    Ryuhyo(流冰)這個系列外觀看似熟悉,實際上卻有截然不同的手感。外型幾乎與Saihyo SG2系列難以區分,但實際使用後會發現外觀相當具有欺騙性,改良過的開刃和具吸引力的價格,很可能讓這系列成為中高階刀具中經常被推薦的選擇,更別提那獨特的黑色大馬士革花紋。

    初心現有的Saihyo型號已經在市場上流通一段時間,但一直不算熱門。我認為其中一個原因在於其開刃較為普通,採用平磨斜面並配有拋光噴砂大馬士革表面,並且刀刃後的厚度並不特別薄。這樣的組合使得刀刃在切割時感覺不夠銳利順暢,在同價位裡有不少刀具表現得更出色。

    初心似乎也注意到了這個情況,並著手改進製造工藝。Ryuhyo不僅價格更親民,切割時的順滑感也大幅提升。其刀身幾何設計採用類似軍刀/V型切削,過渡自然無棱線,讓食材在刀面上滑動時不易黏附,同時保持了整把刀流暢的大馬士革紋路。也許這就是命名的由來。

    蝕刻部分也比Saihyo來得明亮,這應該是表面更光滑(對酸反應較低)的結果。這確實提升了表現,因為刀面與食材之間的摩擦明顯減少。

    鋼材採用經典的SG2,我認為這對多數家庭及專業廚師來說都是終極選擇,兼具優異耐磨性又不會太難研磨或容易生鏽。這讓Ryuhyo更偏向高階市場定位,無論專業還是家庭廚師都適用,而且這次定價明顯比手工SG2刀款更實惠,性能卻接近,外觀也十分搶眼。

    總結來說,Ryuhyo反映出初心製造技術的提升,這是個好現象。雖然大家都喜愛手工刀具帶來的極致表現,但正是這些更為「機械製造」的刀款,讓更多人能享受日式廚刀的順滑切感。這個市場區塊在品質和性價比上同步提升,對我而言絕對是好事。

    1. Don't cut hard things! Japanese knives are brittle so bone hacking is a NO NO!
    2. Wash with neutral detergent after use, and wipe dry;
    3. Please don't wash knife with dishwasher, it will damage the wood handle;
    4. Be careful not to leave the knife close to a heat source for a long time;
    5. It is a lot more dangerous to cut with a blunt knife than a sharp knife!
    6. It is best to sharpen a Japanese knife regularly on a waterstone.

      The etching process starts with the knife being thoroughly cleaned to remove any oils or residues. A protective mask may be applied to the areas not intended to be etched.
