The Sukenari YXR7 Petty 165mm is a compact, high-performance utility knife built around excellent edge retention and toughness.

YXR7 is a high-speed tool steel known for its wear resistance and edge stability, making it well suited to users who want a long-lasting, aggressive edge. Sukenari pairs this with a clean, controlled grind that feels solid in hand while remaining thin enough behind the edge for smooth cutting.

At 165mm, this Petty is especially versatile for meat trimming, portioning, fruit, vegetables and smaller board work where a full-sized Gyuto feels unnecessary.

A practical choice for those who value edge longevity, precision and a more substantial feel than an ultra-thin laser.

Care Instruction
  1. Don't cut hard things! Japanese knives are brittle so bone hacking is a NO NO!
  2. Wash with neutral detergent after use, and wipe dry;
  3. Please don't wash knife with dishwasher, it will damage the wood handle;
  4. Be careful not to leave the knife close to a heat source for a long time;
  5. It is a lot more dangerous to cut with a blunt knife than a sharp knife!
  6. It is best to sharpen a Japanese knife regularly on a waterstone.
  7. Semi-stainless steel won't rust easily but may still patina
  • Profile: Petty

    Utility, Paring

    The Petty knife, a smaller Japanese utility knife, serves as an ideal tool for precision tasks such as peeling, trimming, and slicing fruits and vegetables. With a blade length ranging from 120mm to 180mm (4.7 to 7 inches), it stands out for its ability to handle detailed work like deveining shrimp or cutting garnishes. Its slightly longer and slimmer profile compared to the Western paring knife enhances its functionality for intricate tasks, making it a valuable addition to any kitchen toolkit.

  • Steel: YXR7

    YXR7 steel is a high-speed tool steel known for its exceptional toughness and wear resistance, making it an excellent choice for kitchen knives. This steel is characterized by its high carbon and other alloying elements such as vanadium and molybdenum, which enhance its hardness and ability to retain a sharp edge.

    The moderate carbon chronium content makes it effectively a semi-stainless steel, that sharpens easy like a carbon steel but doesn't require a high degree of maintenance.
    YXR7's toughness ensures it can withstand the demands of daily kitchen tasks without chipping or breaking, while its wear resistance means it maintains its sharpness over time, requiring less frequent sharpening. Knives made from YXR7 steel are appreciated for their durability and ability to perform precision cuts with ease, catering to the most demanding environments.
