Blue Super / Aogami Super 青紙スーパー
55–58 HRC — Soft. Easy to sharpen and forgiving of rough use, but dulls faster. Typical of most German knives.
59–61 HRC — Balanced. Good edge retention with manageable sharpening. Common in mid-range Japanese knives.
62–64 HRC — Hard. Excellent edge retention, holds a very fine edge. Requires more care and a fine stone to sharpen.
65+ HRC — Very hard. Exceptional edge longevity but more brittle — more prone to chipping if used roughly.

What the research shows
Aogami (Blue Super / Aogami Super) is a highly reactive high‑carbon steel, so rust prevention is mostly about moisture control and basic hygiene. Hand‑wash only with warm water and mild soap, never in the dishwasher, and never leave the knife in the sink or soaking. Dry it completely immediately after use, including along the edge and where the blade meets the handle. While cutting acidic foods, wipe the blade periodically with a damp then dry cloth to minimise corrosion. For storage, apply a very thin coat of food‑safe oil (mineral or camellia) if the knife will sit more than a day or in humid conditions, and store it in a dry, ventilated place—on a magnetic strip, in a saya, or in a block with airflow. If light orange rust appears, remove it promptly with a rust eraser or baking‑soda paste, rinse, dry, and re‑oil. A dark grey patina is normal on carbon steel and helps slow further rusting.
