The MV is Masamoto Sohonten's stainless Laser line, monosteel blades built to be very thin and flexible, the kind of knife that excels at slicing rather than chopping. Everything is stainless, so at the end of prep a rinse and a dry is the whole routine, no thought for patina or spots.

The line is a small, focused one: a kiritsuke-shaped nakiri in 240 mm and kiritsuke- and katana-shaped sujihiki in 255 mm, all double bevel on wa ho wood handles. The light grind is the point, which also means these are not knives for bones, frozen things or anything that asks the blade to wedge. Buy it for the thin, nimble cut.
