The Hinoura forge dates to 1905 and has passed through three generations, with the Ajikataya trade name in use since 1982.

The forge traces back to 1905, when the first generation of the family founded it in what was then the village of old Ajikata (旧味方村). The second generation went independent from the main house in 1957 and established the forge (日野浦刃物製作所) in Sanjo, which was renamed Hinoura Hamono Koubou (日野浦刃物工房) in 1991.

The family trade name, Ajikataya (味方屋), has been used since 1982 and takes its name from that founding village.
