The Yoshimi Kato Suminagashi SG2 is a line up that have became a signature of Kato san and the Kintaro brand. It bears unique Damascus pattern that swirls and flows like liquid while have a top notch sharpening that gives it solid performance. A combination of function and beauty lead to a high end blade that characterize the knife making in the TAKEFU Knife Village: top notch material, top notch sharpening and top notch fit and finish.

One thing that will immediately stand out about these blades are the thickness, or rather thinness. These blades have a rather extreme spine thickness running from the tip all the way back to the tang, measured at 1.9mm at the thickest part. This easily put these knives into the laser category, and they do fly through corms and tubers without breaking a sweat. Thanks to the masterful grinding the subtle convex shape of the bevel can prevents food sticking while allows the Damascus pattern to flow from the spine to the edge.

The Suminagashi(墨流し, flowing ink)pattern Damascus is the highlight of the knife, it is mazing that the craftsmen can control and manipulate the shape and distribution of that metal that it flows like liquid. Layers of steel look sometimes like herringbones and sometimes like waves, which is quite unique for knives of this quality and performance. On top of that, a layer of etching is applied to further enhance the contrast between different steels, making them more pronounced.

The SG2 Suminagashi truly is an allrounder, it got excellent steel that maintain edge for an extensive amount of time, the geometry built into the blade allow this sharp edge to flow through pretty much anything you would cut, on top of that, a meticulously designed patter is carefully integrated into the blade, completing the knife with some unique aesthetic that surpass pure function and performance.

  1. Don't cut hard things! Japanese knives are brittle so bone hacking is a NO NO!
  2. Wash with neutral detergent after use, and wipe dry;
  3. Please don't wash knife with dishwasher, it will damage the wood handle;
  4. Be careful not to leave the knife close to a heat source for a long time;
  5. It is a lot more dangerous to cut with a blunt knife than a sharp knife!
  6. It is best to sharpen a Japanese knife regularly on a waterstone.

Kato Knife Manufacturing — or カトウ打刃物製作所 — has its roots in the postwar era of Echizen blade-making. The workshop traces back to 1948, when the Kato family first established themselves in what would eventually become the Takefu Knife Village cooperative. Hiroshi Kato (加藤 弘), the second-generation master, spent over fifty years at the anvil and was instrumental in co-founding the Takefu Knife Village itself — the cooperative that would bring together some of Echizen's finest blacksmiths under one roof.

Yoshimi Kato's path to the forge is one of the more unusual ones in the industry. Before picking up a hammer, he worked as a project manager in construction. It was only after marrying into the Kato family that he began his apprenticeship under Hiroshi. What makes his story remarkable is the speed — Yoshimi took over the smithy after just five years, a timeline that typically takes fifteen or more. He trained alongside Yu Kurosaki and other masters at Takefu Knife Village, absorbing decades of collective knowledge at an extraordinary pace. In 2008, he earned his certification as a traditional craftsman (伝統工芸士), and in 2018 he formally took over the business.

Today, Kato is best known internationally as the “Master of Damascus.” His multi-layer Damascus patterns are among the most striking in the industry, but what sets him apart is the consistency of his heat treatment across a wide range of steels — from SG2 and VG10 to Aogami Super and Ginsan. Every step of production happens in-house, giving him complete control over the final product. The Kintaro and Kanehiro lines, both produced under the Kato workshop, have built a devoted following among enthusiasts who value the combination of visual artistry and genuine cutting performance.

    Sanmai - Stainless Damascus Clad

    Sanmai(Three-Piece) is a common construction for double bevel knives where two pieces of softer cladding steel are forgewelded to each side of a harder core steel. The harder but more brittle core steel will form the hard cutting edge after heat treating, and the softer cladding will support the core to increase the overall strength of the blade.

    Damascus Sanmai utilize damascus steel as the cladding material for the Sanmai construction, which adds aesthetic feature to the blade. On the Kitchen knives with stainless core steel, the damascus cladding will be stainless, this means they will also protect the carbon/semi-stainless core from rusting/discolouration.

    The soft cladding enables the thinning process to be a lot easier than a honyaki or monosteel construction. However, when the cladding is made of damascus, whether etched, polished or mirror polished, the thinning process will take a toll on the cladding, meaning the damascus won't look the same as when it was taken out of the box.

    The etching process starts with the knife being thoroughly cleaned to remove any oils or residues. A protective mask may be applied to the areas not intended to be etched. The blade is then submerged in an acidic solution, such as ferric chloride, which reacts with the different layers of steel at varying rates. This creates a layer of dark oxide on the surface of the blade where the thickness of the oxide varies according to the reactiveness of the steel. After etching, the knife is neutralized in a baking soda solution, rinsed, and dried. The final step involves polishing the blade to highlight the etched design, enhancing both the knife's beauty and showcasing the craftsmanship of its maker.

    Gyuto or santoku - which should I choose?

    Both are all-purpose Japanese knives, and for most home cooks either will handle the bulk of daily prep. The choice comes down to length, blade shape, and how you like to cut.

    A gyuto is the Japanese chef's knife - typically 210 to 240mm with a gently curved edge that lets you rock and slide through cuts as well as chop. The extra length and pointed tip give you reach and versatility, from proteins to large produce.

    A santoku is shorter, usually 165 to 180mm, with a flatter profile and a rounded sheep's-foot tip. It rewards a straight up-and-down push cut, feels nimble in smaller hands or tight kitchens, and is the classic Japanese household knife.

    Rule of thumb: choose a gyuto if you want one do-everything knife with more reach, or a santoku if you prefer a compact, easy-to-control blade. Plenty of our customers end up owning both.

    What is a Gyuto, and what is it used for?

    A gyuto is the Japanese chef's knife — a double-bevel general-purpose kitchen knife. The name literally means "beef sword," and it's still a fair job description: you use it to slice meat, chop vegetables, dice aromatics, and break down fish. If you own one good knife, this is the shape it should be.

    Versus a typical Western chef's knife, a gyuto is thinner behind the edge, sharpened to a keener angle (roughly 15–18° rather than 20–22°), and usually made from harder steel — often above 60 HRC. That's what makes it slice so cleanly: less crushing, less tearing. The trade-off is a more brittle edge, so it asks to be honed and sharpened more attentively than a soft Western blade.

    Blades run from compact 150mm to long 240mm, but for a home kitchen I'd start at 210mm — my sizing FAQ explains why.

    What size gyuto should I buy?

    In a home kitchen I'd pick a 210mm gyuto. It's the sweet spot: long enough for a full slicing stroke, short enough to stay nimble on a normal cutting board and easy to control while you're still building your technique.

    Step up to a 240mm only if you regularly break down large cuts — roasts, whole fish, big vegetable prep. The extra length means longer strokes and fewer passes, but it also means more weight and a bigger board; if the tip is hanging off your bench you're fighting the knife, not cooking with it. If you're mainly doing vegetables and portions, the 240 gives you nothing you'll use.

    For a first gyuto, buy a well-made stainless one around 210mm in the low hundreds. Traditional carbon steels (white and blue paper steel) cut and sharpen beautifully, but they rust if you leave them wet — learn one variable at a time. Better steel is step two.

    240mm vs 210mm gyuto — which size should I choose?

    My call: get the 210mm. I only steer people to a 240mm when they regularly break down roasts, poultry, or whole fish — that's the one job where the extra 30mm genuinely changes how you work.

    The trade-off is stroke length versus handling. A 240 slices through a big piece of meat in one or two long draws; a 210 does the same job with more passes but much lighter handling, and fine work — herbs, small dice — stays quick instead of feeling like more knife than you need. The 240 also wants a bigger board, or its tip hangs off the edge and you compensate without noticing.

    Longer is not more professional, it's just for bigger food. If you cook like most home cooks, the 210 is the knife you'll reach for every day, and choosing it is a decision, not a compromise.

    Japanese vs German kitchen knives — which should I buy?

    If you want the sharpest possible edge and don't mind caring for a harder, more brittle blade, buy Japanese; if you want a tougher, more forgiving knife that can take abuse and be honed casually, buy German. Japanese knives, like the gyuto, are ground to a much sharper edge angle, typically 15 to 18 degrees compared to 20 to 22 degrees on a western chef's knife, and use harder steel that can exceed 60 HRC, which is why they cut with such precision but also chip more easily. German knives are softer and more ductile, so they resist chipping and bend rather than break, but they won't hold that razor-sharp edge as long.

    A Japanese knife is not the right choice if you regularly cut through bones, frozen food, or hard squash, or if you're used to rocking the blade hard on a cutting board, that lateral stress and impact can chip the edge. German knives are the better everyday beater for heavy prep, but you'll trade away the effortless slicing and fine edge retention that make Japanese steel so satisfying.

    SG2 is my go-to recommendation for anyone who wants a stainless knife that performs like carbon steel without the fuss. At 1.25% carbon and HRC 62-64, it takes a screaming edge and holds it far longer than VG-10 or AEB-L, all while being fully rust-resistant. You get the best of both worlds: no patina worry, but real cutting performance.

    SG2 vs AS steel for kitchen knives — which is better?

    Neither is objectively better, it just depends on whether you value stainless convenience or a laser-sharp carbon edge. Go with SG2 if you want a knife that holds a screaming edge without any babysitting. Choose AS if you are chasing the thinnest possible edge and don't mind wiping the blade down after every use.

    SG2 is a powdered stainless steel from Takefu, usually sitting around 62-64 HRC. It is tough and resists corrosion, which is why I reach for it when working with acidic foods. Aogami Super is high carbon and typically harder at 64-66 HRC. It sharpens to a hair-whittling edge that lasts slightly longer than SG2, but it will rust if you neglect it.

    R2 steel vs SG2 — are they the same?

    Yes, R2 and SG2 are the same steel — R2 is the name used by Kobelco Steel, and SG2 (Super Gold 2) is the name used by Takefu Special Steel for the identical powdered metallurgy formula. The catalog confirms this: SG2 / R2 is a powder (PM) steel from Takefu Special Steel, Japan, with a composition of 1.25% carbon, 14.0% chromium, 1.8% vanadium, 2.3% molybdenum, and a hardness range of 62–64 HRC. So if you see a knife labeled R2 or SG2, you are getting the exact same material.
