The Hatsukokoro Tsuchime Ginsan Honesuki 150 mm is a Japanese poultry-style knife crafted in Tosa for the Hatsukokoro brand.
It features a Ginsan stainless steel core, finished with a tsuchime (hammered) texture on the surface, providing both aesthetic character and reduced food drag. The edge is ground in a symmetrical 50:50 bevel.
The handle is an octagonal mono-ebony design, and is ambidextrous (suitable for both left and right hand use).
The knife is primarily intended for poultry breakdown, though it may also function as a sturdy petty knife.
Care Instruction
- Don't cut hard things! Japanese knives are brittle so bone hacking is a NO NO!
- Wash with neutral detergent after use, and wipe dry;
- Please don't wash knife with dishwasher, it will damage the wood handle;
- Be careful not to leave the knife close to a heat source for a long time;
- It is a lot more dangerous to cut with a blunt knife than a sharp knife!
- It is best to sharpen a Japanese knife regularly on a waterstone.
